Ingredients:
5 potatoes, peeled
1 onion, diced (use 1/2 for potatoes and 1/2 for meat filling)
1 large egg
3 Tbsp flour
1 tsp salt
1/8 tsp black pepper
Vegetable oil
1 Tbsp sour cream (optional)
1/2 lb ground beef
1/4 tsp salt
Directions:
1. Into a large bowl, grate potatoes.
2. Grate onion into the same bowl
3. Add 1 egg, 3 Tbsp flour, 1 Tbsp sour cream, 1 tsp salt and 1/8 tsp black pepper, and stir well.
4. Mix ground beef, 1/2 onion, 1/4 tsp salt and black pepper to taste. Form into 16 skinny patties and place them on a clean surface
5. Heat a large non-stick skillet over medium heat and add 2-3 Tbsp oil. Once the oil is hot, add 2 Tbsp of the mixture to the skillet, flattening it out. Top with a thin meat patty and cover the meat with another 2 Tablespoons of potato batter.
Saute the potatoes until they are golden brown then flip them and continue sautéing until golden brown (about 4 minutes on each side).
Repeat with remaining batter, adding more oil if it is needed. Serve with sour cream. (optional)
